The smell of easy baked pan bread

I just love the smell of this easy baked pan bread. There is really nothing like homemade bread and this is a bread which is so easy to make. You don’t even have to knead the dough.

The special thing about this bread is that it needs to rise for about 12 hours and then you bake it in a hot pan with a cover. This way the damp from the dough stays inside the pan and you then get a beautiful thick crust around the bread. Crispy on the outside and soft and moist on the inside.

I guess you now think; 12 hours!! Forget it! Way too complicated for me! But listen! If you put all the ingredients together in a bowl in the evening and stir it gently around for a few minutes, you don’t have to do anything about it until the next day. The movements you need to do are done in a few minutes, but the rising time you need to plan ahead. It won’t work for a last minute action.

I have made a slideshow, which shows you the steps I have made. The ingredients you can also play with. I used a special mix of flour which I love to use for this bread, but you can also just use plain flower or what you prefer. If you use a darker/stronger flower I recommend combining it with wheat flower. Otherwise I am afraid the bread will get too solid.

The illogicality about this recipe is that it doesn’t matter in what order you mix the ingredients. Normally you would mix the yeast with water first, and you can do that. But that is only necessary if you use fresh yeast. I always use dry yeast and then it doesn’t really matter with this bread. The yeast has time enough to make the dough rise within 12 hours.

When you have mixed all the ingredients together its time to let it rest for 12 hours under a kitchen towel. (Make sure your bowl is big enough for the dough to rise). NB. You can let it rise for a longer time without any problems if you do not have the time after 12 hours.

After 12 hours you put the dough on your flour covered kitchen counter and fold it over 4-5 times in the flour.

Now you prepare a bowl with some naturally oil and scoop the dough into the bowl. Let it rise for another 2 hours.

After 1 hour you take your pan with cover (which is suitable for the oven) and place it in your oven on 250 degrees Celsius. This is very important!!! By placing your pan in the over long before your dough, the pan and oven gets well heated up all over. That is important to reach a perfect crust and to make sure that the dough doesn’t stick to the pan. This way it is NOT necessary to butter the pan.

When the dough is ready you bowl it over into the warm pan. Place the cover on the pan and into the oven for about 35 minutes. Lower your heat to 225 degrees Celcius and remove the cover from your pan and bake the bread for another 15 minutes.

And there you have it!! A beautiful round bread with a thick crunchy crust.

This bread is very suitable to eat as a snack with garlic/herb butter, pesto or a tapanade. But for a healthy sandwich you wont go wrong either.
